We are surrounded by fields, laden with huge juicy blueberries. Yesterday my family picked up 20 pounds from a friend’s farm. When I got home, I whipped up some salsa to go on our burgers for dinner. It also tasted great with multigrain chips.
1 cup of blueberries (chopped)
1 tsp fresh ginger (minced)
1 avocado (cut into small pieces)
1/2 jalapeno pepper (minced, or add to taste)
2-3 tblsp onion (minced)
Small handful of cilantro (minced)
Splash of lime juice
Salt
